Blackened Mexican Pork with Salsa Roja

Mexican spiced heritage pork tenderloin, manchamantel salsa roja, yellow rice, caramelized carrots and cumin broccoli. Monchamantel sauce is made with ancho, tomatoes, onions, pineapple, so it’s super flavorful with a touch of sweet. Superclean: GF/DF/RSF. Pork is local from a co-op of family farms in NY and PA.
