Chicken Saltimbocca with Truffled Parm Potatoes

Saltimbocca's name means to “jump in the mouth” with flavor. Chicken pounded thin and marinated it in a mixture of chopped basil, garlic and olive oil, then browned with cheese. Served with truffled parm potatoes.
