Crispy Tofu Bricks seared to perfection and served with Arugula Walnut Pesto and Crispy Roasted Potatoes and Cabbage over a Carrot Puree. Inspired by one of our favorite vegan chefs, Bryant Terry, this dish sounds simple but it brings out the best flavors of the vegetables and pairs perfectly with a gentle sauce of organic carrots, seasonal herbs, and a hint of ginger. One of our all-time favorite meals.
